Alto-Shaam's 1200-TH/III 76"H x 24""W Elec DBL Low Temp Cook & Hold Oven lets you cook your food to perfection and conveniently hold it in the same oven. Equipped with the Halo Heat system, which provides even and consistent cooking on a daily basis, this oven can smoke, roast, re-heat and hold your food while requiring little attention or workload.

Perfect cooking in both individually-controlled compartments of this two-level cook and hold oven can be achieved by one of two methods, by time and by product temperature. Product temperature cooking is done by using a probe which senses when the meat has reached the desired temperature. When the preferred time or temperature has been reached, the oven automatically switches to hold mode to ensure the food stays warm, but doesn't dry out. Operation of this oven is made easy with push-button temperature and timer keys, along with a 4 digit LED display. Eight programmable menu buttons allow you to store your favorite preset recipes and reduces operation to simply loading the oven, pushing the power button, the preset menu button and the start button. The patented SureTemp heat recovery system automatically restores the temperature to its preferred setting every time the door is opened. Additionally, since the amount of grease-laden air released is minimal, no oven hoods, outside venting or fire extinguisher systems are required.
